Mabele(Sorghum) Bran Muffins Recipe
Growing up I always loved my mom's Bran Muffins. These are the only muffins that I remember her making. On picnic days at school I would carry these heavenly creations and wave them around as others look in envy (Okay maybe that was a lil' dramatic but the teachers did take them for "safe keeping" and they still haven't been returned to me to this day). My point is these muffins are really good. So good that you would let your pet fish die because you don't wanna share with them. So good that I don't eat any other type of bran muffin because the my tastebuds are used to greatness.
About a year ago I took it upon myself to learn this recipe because this should be learnt for generations to come. In today's recipe though, I have used mabele (sorghum) flour instead of the normal cake flour because gluten free baking and what-not. And I used honey instead of sugar because because of lack of the latter in my cupboard.
Recipe (Makes 24 Muffins)
Ingredients:
2.5 cups Mabele flour
2.5 cups Digestive bran
1.25 cups honey (you can increase if you want more sweetness)
1.5 teaspoon Bicarbonate of soda
1 teasppon cinnamon
2 eggs
1 teaspoon Vanilla Essence
1 cup coconut oil
1 cup grated carrots
*Soy Milk(According to how you want them)
-Preheat oven at 180 degrees Celcius
-Mix the dry ingredients together
-Mix the wet ingredients together
-Mix all ingredients together
-Place into a muffin pan for 15-20 minutes
-Allow to cool down and enjoy!
*I only use Soy Milk because I'm lactose intolerant. You can use which ever milk you prefer.
